In 2010 I was diagnosed with Coeliac Disease, I was out of work at the time and looking for a new career path. Being from a family of 10 children I learned how to bake from a very young age and always had the job of making scones, apple tarts & cupcakes for our weekend treats.
Shortly after being diagnosed Coeliac I was in a Café with a friend getting coffee. Looking at her deciding which type of cake, scone or muffin she would like to eat I craved and craved for something freshly baked, like you would make at home. I went to the gluten free section only to find a tiny selection of measly pre-packed options which had shelf lives of over a year, this was a NO NO for me. The seed was planted, I decided this is a problem that must be solved. Coeliac’s shouldn’t have to miss out on enjoying something delicious and freshly baked. I shared my idea with my husband and sons, they said go for it! We started Rosaleen’s kitchen in 2013.
